Vegetarian Mexican Lasagna

Don’t know what to make for dinner tonight? What about a vegetarian Mexican lasagna?! It’s easy and quick to make, healthy and it looks great! So if you want to know how to make this dish than keep on reading!

Supplies (4 persons)

  • Quorn or another meat substitute (± 200 g)
  • Olive oil
  • Mexican vegetables (700 g, chopped)
  • Pasta sauce (± 400 g)
  • Pineapple (250 g)
  • Tortilla wraps (± 8)
  • Grated cheese (± 100 g)
  • Cheddar cheese (± 100 g)

Step 1

Preheat the oven to 200 degrees and heat the olive oil in a frying pan. Then add the vegetables and stir fry them for a while. Then add the quorn (or another meat substitute) and continue to stir fry.

Step 2

When everything is heated up a bit add the pineapple and the pasta sauce. Keep stirring everything until it starts to boil.

Step 3

Put one fifth of the vegetable sauce in an oven dish and put a tortilla on it. Then sprinkle some cheese (both the grated and cheddar) over the tortilla and then put another tortilla on top of that.

Step 4

Continue step 3 until you run out of tortilla’s.  Finish with a layer of vegetable sauce and sprinkle some cheese over it.

Step 5

Bake the lasagna for about 20 minutes. After that you’re already done!
