Stuffed portobellos are an easy starter for dinner parties or just a simple meal (combined with a salad). Portobellos are quite healthy and taste delicious! So if you want to know how to make these, keep on reading!
Supplies (3 persons)
- 1 onion
- 2 cloves of garlic
- 1/2 sweet red pepper
- 6 portobellos
- pepper and salt
- some pine nuts
Preheat the oven to 200 degrees. Cut the onion, garlic cloves and red pepper into small pieces.
Remove the stalks from the portobellos and chop these in small pieces as well. Then put the portobello mushrooms on a baking tray and bake them for about 10 minutes (without anything in it!).
Heat the olive oil in a frying pan, add the onion and garlic and fry until soft. Then add the chopped mushroom stalks and sweet red pepper and cook until softened. Add some pepper and salt.
Take the portobellos out of the oven and spoon the mixture into them. Then crumble the mozarella on top of them and put them back in the oven for 7-10 minutes.
Roast the pine nuts and sprinkle them over the mushrooms. And after that you’re already done!
