Supplies (4 persons)
- 400 gram cherry tomatoes (cut in half)
- 2 cloves of gralic
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 100 gram white almonds
- 300 gram pasta
- 50 gram parmesan cheese
- some fresh basil
- 1 red pepper (cut in rings)
- 2 tablespoons with capers
- 250 gram ricotta cheese
Preheat the oven to 200 degrees. Put the tomatoes and the gralic on a bakingtray and drizzle the olive oil, balsamic vinegar and some salt over them. Then roast the tomatoes and garlic for about 25 minutes.
Roast the almonds in a pan and let them cool afterwards. Cook the pasta.
Put the almonds, parmesan cheese, red pepper, some of the basil, the roasted garlic and 2/3 of the roasted tomatoes in a kitchen machine. Mix it and add some pepper and salt (if you want to).
Mix the drained pasta, pesto, the rest of the tomatoes, capers and the rest of the basil. Serve with a bit ricotta cheese on top.
